CONVENTIONAL DRIED FRUITS,
VEGETABLES AND NUTS

Though both methods of drying food (freeze and air) remove moisture and prolong shelf life of food, they are in fact distinctly different and each comes with certain benefits of their own. Air-drying can be done by circulating hot, dry air through a chamber or room where the product is stacked on trays or on a conveyor belt or alternatively on racks in dry hot weather out in the sun. This process removes the moisture from the product, producing a dried product that still looks similar to the raw product just slightly shriveled.

WHY
FREEZE DRY?

Freeze-drying or lyophilization is a dehydration technique based on changing the product’s water content from a fixed matter to a gas similar or ice to vapour.

Freeze-drying preserves a product’s nutritional value, taste and appearance. Through heat and pressure the deterioration process is delayed thus extending the food’s shelf life. Water having neen removed also makes the food much lighter and easy to transport.
